Located in the heart of Cava, Sant Sadurní d’Anoia, lies Pere Mata’s 5 ha estate. After working for many years at large Cava producers, he started his own estate in 2000. Inspired by the Grower Champagne movement, in particular his relationship with Cedric Bouchard, his goal is to create Cava as good as terroir driven Champagne. He achieves this through constant learning and experimenting, much like a “mad scientist”.
He farms his plantings of Xarel.lo, Macabeo, and Parellada organically and everything is done by hand. In the cellar, the wine ferments with indigenous yeast that is cultivated from grape must every year adding distinctive characteristics vintage to vintage. Only free run juice is used and the wines ferment in stainless steel and sometimes Xarel.lo will see oak. The wines undergo at least 24 months of lees ageing with some cuvées seeing five years. He releases a small number of his non vintage cuvées or Cupadas (about 500cs) with every Cupada seeing slight variation, and will move onto the next numbered Cupada once it has sold out. As far as dosage goes, there is none; all wines are Brut Nature.
We had the opportunity to taste these wines several months ago now and we were absolutely delighted by them, and astonished by their character and complexity. And the price points make these wines even more spectacular!
