Grade A Yamadanishiki milled down to 40%, grown in the Tojo district in Hyogo, the best area to source Yamadanishiki. Number 9 yeast is used for fermentation, which is noted to be the best to bring out ginjo aromas.
A sake with great finesse and elegance, beautiful ginjo aromas of melon, apple, and anise with subtle rice umami. Reminiscent of great white burgundy, enjoy slightly chilled in a burgundy glass.
