Yamadaho (or Yamadabo) rice is milled down to 50% and grown in Taka, Hyogo. Matured for 18 months at low temperatures before release, this is a sake with good richness and depth of its ginjo and mineral aromas, particularly noted for its soft, elegant acidity. Enjoy in a wine glass slightly chilled
Being a rare sake rice variety, Yamadaho is the parent to the famous Yamadanishiki. The shinpaku (middle starch) is said to be smaller than Yamadanishiki but the quality of that starch is of very high quality. The town of Taka is where Yamadaho originated.
