Grade A Yamadanishiki milled down to 40%, grown in the Tojo district in Hyogo, the best area to source Yamadanishiki. Yamahai method was used for the starter mash, bringing more complexity and rice umami to the finished sake. Matured for 36 months at low temperatures prior to release.
A rich and full sake with great depth, layers of fruit & rice umami notes, good acidity, and lengthy finish. This will definitely evolve in the glass, enjoy in a burgundy stem, slightly chilled (13~15C). An exquisite sake showcasing the fine balance of elegance, power, and complexity.
