Our Rice Field

Tasting Note: Yamadanishiki grown by the team at Nichi Nichi at their own rice field located in the best area called Saido in Akitsu village of Hyogo prefecture which is said to be like a “grand cru” site for growing sake rice. This is the pinnacle of the Nichi Nichi lineup!

Brewed using the kimoto method; all other details are undisclosed, including the milling rate. Expect a slight effervescence on open with aromas of white grapes, melon, and apple, with hints of fresh herb. Balanced and refined on the palate with good acidity, a bit of rice umami, finishing clean and soft with nice length.

The label is quite simple to represent the focus on what’s inside the bottle. A very limited bottling.
