Tasting Note: Yamadanishiki grown in Akitsu village of Hyogo prefecture. Brewed using the kimoto method, all other details are undisclosed, including the milling rate. This bottling was aged for one year in the brewery’s low-temperature refrigerator and then released as a library release, as Hidehiko believes that Kimoto has great potential for maturation. Quite special and a very limited release.
