Tasting Note: The rare Aiyama rice grown in the Tojo district of Hyogo. Brewed in the kimoto method, everything else is undisclosed including the milling rate. 

Slightly effervescent on open, this sake is elegant, fresh, and fruity with notes of yellow plum, lychee and a touch of mineral. There is lovely depth, restraint, and good length on a drying finish. A sake lower in alcohol (than average), crafted to be an everyday approachable sake.
