Tasting Note: This sake sits at the pinnacle of the Nabeshima sake lineup but is shrouded in secrecy. All that is mentioned is that it’s a Junmai sake (though not stated).
The idea behind this is to craft the best or ultimate sake without thinking about points or doing well in a sake competition. Attention is put into crafting a sake that compliments the meal.
Also, this sake pays respect to growers who work very hard to grow the best quality of rice. Though the rice is milled to a high degree (daiginjo), it doesn’t go as far in the single digits or even 20% mill rate that has become a focus for other brewers, as Mr. Iimori considers this a waste of something very precious.
This is a sake crafted as a continuous evolution of the quality and spirit of those who have supported the Nabeshima sakes and its path towards its the future. The most limited offering in the Nabeshima lineup.
Aromas of citrus and fresh herb with layers of subtle nuances on the nose. A beautifully ripe and round texture, this is a sake that expands after each sip revealing something new each time. Superb balance and long finish that lingers, this is definitely a superb sake!
