Hidden Daiginjo Abelia Yeast

Aiyama rice is milled down to 40%, grown locally on the Saga Plains, and fermented using the yeast from the Abelia flower.

A previous winner in the Fukuoka Prefecture Sake Competition, this is a sake with fruity & floral aromas on the nose with an elegant, rounded texture, a perfect balance of sweetness and acidity, and subtle ginjo aromas on the drying finish.

Aiyama is a sake rice with roots to Yamadanishiki & Omachi, a large-grained rice which has a shinpaku (starch core) similar, if not even larger than Yamadanishiki. A harder rice to grow due to the larger grain and stalk which make it prone to falling over during the growing season.
