Omachi rice is milled down to 40%, grown locally on the Saga Plains, and fermented with the yeast from the Rhododendron flower. Produced in the Kimoto method which is a longer process due to the lactic acid that is cultivated in the Shubo (starter mash) is done naturally. The sake is full of richness and volume, with soft aromas of banana, melon, and yogurt on the nose extending to the palate, a very elegant with a drying finish. Enjoy slightly chilled in a wine glass but also can be slightly warmed to bring out the sweet rice umami.
