Wataribune rice milled down to 77%, grown locally in Shiga. After bottling the sake was matured for 12 months at the brewery prior to release. 

Using the prized Shiga Wataribune #6 rice, the light milling rate brings out more layers of rice umami notes in the sake. Dry on the finish with a rounded texture, this sake can be enjoyed at different temperatures showing a range of flavours when chilled to warmed while always keeping amazing balance in its structure.

The Wataribune rice was once thought to be extinct but was revived in Shiga prefecture from just a handful of seeds found at the local agricultural research institute. This is now a highly prized sake rice in Shiga and is said to be the parent of the famous Yamadanishiki rice.
