Ginfubuki rice is milled down to 55% and grown locally in Shiga. Out of the Shichihonyari lineup, this sake generally tends to be softer in weight while still having lovely aromatics and a good depth of rice umami balanced well with its acidity. 

Ginfubuki is a rice developed in Shiga with Yamadanishiki and Tamasakae as its parents, bringing the best features of Yamadanishiki with the unique umami richness of the Tamasakae.
