Kamenoo rice that is locally grown in Tochigi, without the use of any chemicals or pesticides. Crafted in the kimoto method and naturally fermented (no added yeast). This Kamanoo rice is very special as it was propagated from the historic grain of Kamenoo obtained from the gene bank managed by the government. This was then propagated in their fields. The “Classic” is a newly updated series of sakes in the Senkin lineup after the brewery refocused its direction in 2024.

Tasting Note: Slightly effervescent on open and faintly cloudy, expect aromas of pear, lychee, and some lactic yogurt notes. Fresh and bright on the palate with a slightly creamy texture, the sweetness is nicely packaged with the fresh acidity. Soft umami notes & citrus on the finish.
