Akitsu Yamadanishiki

日日 山田錦 秋津

Yamadanishiki grown in the Saido area which is in Akitsu village of Hyogo prefecture. This is said to be like a “grand cru” site for growing sake rice. Brewed in the kimoto method, everything else is undisclosed including the milling rate.

Slightly effervescent on open, this sake is elegant and with restraint, offering aromas of melon, apple, with superb balance in its acidity, sweetness, and dryness. A round texture on the palate with good depth without being heavy, good length on the drying finish. A sake lower in alcohol (than average), crafted to be an everyday approachable sake.
