Tamasakae

Tasting Note: Tamasakae rice is grown in Kohoku village, which is in Nagahama, Shiga. This rice was sourced via an introduction to a great rice grower (who is the 5th generation) from Mr Tomita of Shichihonyari, where Hidehiko Matsumoto worked during his “samurai training” prior to establishing Nichi Nichi Brewery. Brewed in the kimoto method, everything else is undisclosed, including the milling rate.
Slightly effervescent on open, expect aromas of green apple and pear with hints of rice flour on the nose. Elegant with good depth on the mid-palate, soft acidity, and drying finish. A sake lower in alcohol (than average), crafted to be an everyday, approachable sake. A limited release.
