Shiga Wataribune #6 rice milled down to 65%, grown locally in Shiga. Kanazawa yeast (yeast #14) to bring out the delicate ginjo aromatics and rice umami. Matured at low temperatures until release. A sake with an intricate balance of finesse and elegance with a deep core of power and layers of flavour. 

The Shiga Wataribune #6 was an almost extinct sake rice that was revived in 2004 from a mere 50g and has been gaining in use by local growers in Shiga to be a sake rice that represents the prefecture. Said to be a parent to the famous Yamadanishiki, it requires a lot more attention when growing. Kita Shuzo has been using this rice since the beginning of its revival.
