Yamadanishiki milled down to 40%. Kanazawa yeast (yeast #14) is used to bring out the delicate ginjo aromatics and rice umami. Matured at low temperatures until release. Rich and amazingly balanced with beautiful ginjo aromas of melon, lychee, and ripe pear. Fresh acidity with a clean drying finish. Enjoy slightly chilled.
