Second

Following the “first”, the theme for the “second” is evolution, or to express the changing landscape of Japanese sake. Through the use of the white koji (traditionally, it’s yellow koji) & new yeast strain developed in Shiga, this is a sake that breaks tradition and is in the group of a new wave of sake. A junmai sake using a rice blend of Yamadanishiki and Nihonbare (a table rice) milled to 65%.

Tasting Note: Aromas of ripe fruit, banana, citrus, peach and strawberry, with an elegant texture, a hint of sweetness balanced with refreshing acidity and a clean finish. Enjoy chilled in a wineglass
