A Daiginjo with rice milled to 50%, this sake was aged in a 0 degrees C, environment for a long, slow maturation process. A very rare sake crafted by one of the late, great Toji’s of the Noto style, Shoichi Tenpou. He led Kita Shuzo and the Kirakucho style from 1955 for over 50 years as Toji, and oversaw operations in his final years. A lot of his teachings are core to the current generation of Kita Shuzo and its line of Kirakucho sakes. This is a great example of the history of Noto-style sakes and the heritage of Kita Shuzo.

Tasting Note: An elegant umami core while still retaining the ginjo aromas, like white mushroom, menthol, and tree nuts. Medium-bodied with umami notes coating the palate with a soft, clean finish. A beautifully balanced and finessed sake; enjoy with a slight chill or at room temperature to experience its full flavour potential.
