Yamadanishiki milled down to 40%, grown locally from contract growers in Nabari. A very special sake and maybe one of the most important sakes produced by Kiyasho Shuzo. Tadayoshi Onishi feels that the hard work put in each year by the rice farmers is a big part that allows the brewery to craft such high-quality sake.
Beautifully refined ginjo aromatics of anise, apple, berry, and fresh herb notes on the nose. Rich but not heavy on the palate, rounded texture, fresh acidity, amazing depth of flavour, soft rice umami and mineral on the drying finish. Amazing balance and precision! Enjoy chilled in a wine glass.
