Saumur Rouge

100% Cabernet Franc from young, south/southwest-facing vines from lieu-dit La Ripaille in Breze. Soil is predominantly sandy, with clay for 1.5m before reaching tuffeau limestone. Hand sorted in the vineyard, before grapes are destemmed and macerated for about 6 days. He favours infusing the wine rather than agitating it with pumpovers, pigeage, or délestage. The wine ages in stainless steel for 6 months.
