Yamadanishiki is milled down to 50%, from rice fields roughly 5km away from the brewery and is owned and farmed by Nagayama Honke Shuzo. The flagship sake to the brewery with notes of melon, apple, and lychee with a silky texture, soft & round on the palate. Great elegance and balance. Enjoy in a wine glass slightly chilled to slightly warmed

Compared to the soils of Hyogo, the Yamadanishiki (grown in Ube) grow on sandier soils, which is said to contribute to a softer, silkier profile on the palate. As with burgundy wines, a sake true to the “Domaine” label, with the rice grown on fields owned by the brewery, located within the same town, and using the local water.
