The plums used are then puréed and added back to make a rich, concentrated umeshu (plum sake). The kasutori shochu is a distilled product using the sake lees from sake production at the brewery. This style of umeshu was originally made by one of the plum orchard farmers' grandmothers, who then taught the brewery staff how to craft.
Wonderful aromas of plums on the nose, rich and concentrated on the palate, with beautiful plum flavours, fresh acidity, and a lengthy finish. A very special plum sake that can be enjoyed neat, on the rocks, with a splash of water or soda. Versatile and is often paired with desserts, charcuterie & cheese, fois gras, and also enjoyed during a meal
