Château Pajzos Esszencia
Only produced in special vintages where conditions are perfect, botrytis affected Furmint, Harslevlu, and Muscat picked very late in the vintage, placed in tank and only the free run juice is used (no pressing of grapes). The tiny amount of nectar is collected is then fermented (often taking years) in tank and glass, then matured in neutral oak casks. Only 2430 bottles made in 375ml format. Extremely rare.
Tasting Note: An array of aromas of apricot, marmalade, candied lemon, orange peel, butterscotch, maple syrup, acacia on the nose. Rich, luscious, very sweet and full on the palate with a great concentration of fruit & spices, mouth-coating texture, perfectly balanced acidity to counter the sweetness, and a very long, beautiful finish.
