This HOUSE JUNMAI, the pride of Nakashima Brewery is made from Mizunami-nishiki, a heritage rice named after the city the brewery is in.  The Nakashima family has planted 2 acres of this rice locally using organic farming practices to create a rich and complex sake.  The nose is earthy, the palate full-bodied and well rounded.  It shows beautifully in all 3 temperatures or even on the rocks.

Highly fragrant, elegant and sophisticated with good acidity.  Aiyama rice, used for the kake rice provides fullness. 60% polished off.

The Omachi rice is perfectly suited for Kozaemon’s spring water.  Highly fragrant, rich and full-bodied on the palate.  The sweetness of the rice shines through in this powerful sake.  Great with sashimi and sushi dishes.

Made from a rare plum called Beni Nanbokai that has been ripened to perfection by the placement of mirrors in the orchards to sun kiss the plums on all sides.  This helps to achieve not only the lovely colour of this Ume Shu but also maintain the sweetness and acidity and depth of flavour.  Junami sake brewed with originally more than 20% alcohol is specially used in the making of this perfectly balanced, sweet plum wine.

Tokubetsu the ‘special’ junmai is Nakashima Brewery’s top selling sake.  Made of 100% Miyamanishiki rice from Nagano Prefecture with 45% polished off.  Aroma and flavours of apple and Asian pear make for a very pretty, elegant sake.
